My husband and I don't have big plans for the holiday weekend. We live too far away from family to pop in for the weekend so I am trying to make it as special as possible by honoring family traditions. This means making the all important egg souffle for Easter brunch. My husband's mother makes this dish for every holiday and it is beyond amazing so it was a tradition I happily embraced.
