Banana Bread




The lack of posting this past week is due to a nasty virus that attacked our laptop.  After taking it to a computer doctor, it looks like we may be going computer shopping tomorrow.  I think this time around we are going to join the Mac users.  My husband and I have been going back and forth whether to splurge for one and this latest virus on our PC may just be the catalyst that we needed.  So...with my new found free time, I've been doing some baking.  In this house, we never manage to eat all the bananas before they turn too soft so this recipe is perfect for those brown bananas sitting on your counter.  This banana bread recipe is a simple but yummy recipe from my mom that brings back fond memories of her baking this on a cold winter day.  Feel free to add nuts or chocolate chips to the batter and enjoy with a cold glass of milk!

Need:

2 1/2 c. flour
1/2 c. sugar
1/2 c. packed brown sugar
3 1/2 tsp baking powder
1 tsp salt
3 Tbsp oil
1/3 c. milk
1 1/4 c. mashed bananas (about 2-3 medium bananas)
1 egg

Directions:

Preheat oven to 350 degrees.  Combine flour, baking powder and salt in a medium bowl.   Mix sugar, brown sugar, oil, milk, egg and bananas.  Add the flour mixture and blend.  Bake for 55 to 65 minutes in a 9" greased loaf pan.  Wait to cool before serving.

  2. No, it was a PC. We are going to buy a Mac this time around though for that exact reason! No viruses.

  4. I can't wait to make this. I always have bananas around and want to make something sans chocolate chips (I'm always doing chocolate chip banana bread!). Yummy!

  6. Wow, this banana bread seems so simple to make! My recipe has so many things in it that I tend to save it for special occasions only. I'll take this one down though and give it a try! I do have a ton of bananas in my freezer, feels meant to be! ;)
